To make ice cream without an ice cream maker, pour the ice cream mixture into a shallow container (glass or metal work best) that you've popped in the freezer previously to get nice and chilled.
Bring to the boil, then turn off the heat and set aside for 10 minutes to infuse. Use this vanilla ice cream as the base for creating other flavored ice creams. If you want to add fruit, put the sugar in the chopped fresh fruit ahead of time to sweeten it, and then add to the mixture!

Ice cream will look gritty once done. Whisk the cream, milk, sugar, vanilla and 1/2 teaspoon salt in a medium saucepan and bring to a simmer over medium heat. Add the pods to the cream and bring to the boil, then add the sugar and stir until the sugar has dissolved.
Stir together for about 2 minutes to help the sugar granules dissolve.
Add evaporated milk, condensed milk, and vanilla. Remove from the heat and add the remaining cream, milk, and vanilla. Remove vanilla bean (see tip).
