Sourdough Pancakes
Sourdough Pancakes. In a blender, blend the eggs and melted butter at low speed. Let the pancake batter sit, covered, for about 30 minutes.
As soon as the leavening is added, the batter becomes bubbly. Grab a large mixing bowl and whisk together the flour, baking powder, baking soda, salt, and sugar. In a separate bowl, combine the nonfat dry milk, salt, baking soda, and sugar.
I like my sourdough pancakes to have that crispy fried edge.
This traditional sourdough pancake recipe uses a small amount of sourdough starter with an overnight ferment. Mix the starter, eggs, coconut oil, honey, and salt in a glass bowl. Cover and let rest at cool room temperature (about 65°f to 70°f) for about 12 hours, or overnight.

To thaw sourdough pancakes, microwave each one for about 30 seconds, or just pop them in the toaster. Crack in the eggs and pour in the milk, then beat the mixture well to combine. Tip all the ingredients, except the butter, oil and maple syrup, into a bowl with a large pinch of salt, and whisk well until you have a thick, smooth batter.
In the morning add the eggs, oil and leavening.
In a large bowl, combine the sourdough starter, egg, water, and oil. The night before you intend to make the pancakes, you can mix some sourdough discard with the milk to blend it. Pancakes made with a sourdough starter, milk, egg and bread flour giving them a fluffy texture.
That means you add the butter, eggs, milk, vanilla, and sourdough starter to a large bowl and mix them all together with a whisk.
Growing up, my dad would often make pancakes on the weekends and it was a real treat! Be creative with the grains you use in these pancakes. In a separate medium bowl, whisk eggs and 1/2 cup milk until well combined.
